Exactly What Makes Me, Me?
The El Cipres Estate is located on the North West slopes of the Picacho Volcano in the Bálsamo-Quezaltepec coffee region. This coffee is a Bourbon varietal grown under shade in the nutrient rich volcanic soil.
Before the cherry is processed, the cherries are floated and the best are hand-selected for drying. Drying takes place on African beds and turned every 30 minutes except in the midday hours when the coffee is covered. Drying can take up to 21 days.
